Ingredients
- 1 cup chopped onion
- 1 cup yellow bell pepper. julienne
- 1 cup andouille sausage, split and sliced.
- 1 cup cooked chicken, julienne
- 1 cup 41/50 shrimp, peeled and deveined
- 1/4 cup blackened or cajun seasoning
- 4 cups heavy cream
- 1 cup grated parmesan cheese
- 1/4 cup blended oil
- 8 cups cooked penne pasta
- 1 Tablespoon freshly chopped parsley
Directions
1. In a large pan, heat oil. Saute bell pepper and onion for about 2 minutes.
2. Toss sausage, chicken, and shrimp with cajun seasoning, then add to the pan with onions and peppers. Saute for about 3-4 minutes until the shrimp is cooked.
3. Remove protein from the pan, and set aside. In the same pan, add in the heavy cream. Bring to a simmer.
4. Whisk in the parmesan cheese until thickened. Fold in the seasoned protein and pasta. Return to simmer
5. Garnish with parsley and serve.
